The opening of Kol and Cavita gave a shot in the arm to London's high-end Mexican dining scene and it looks like another exciting chef from Mexico is on the way too.
Jesús Durón was the executive chef of Pujol, which happens to be no. 13 in the World's 50 Best Restaurants list, and he's getting ready to open Dué in London. For that, he's teaming up with Lindsay Jang of Hong Kong's Yardbird for a restaurant that's pitched as serving up "globally inspired, seasonally-focused upscale dining".
We're short on all the details right now but an upcoming residency at Carousel, which is designed as a preview of what will be coming to the restaurant, gives us a better idea of what to expect. On that menu are dishes like:
- Chicken chicharron, pico de Gallo, maylor shrimp
- Scallop tsukune, corn dashi, egg yolk
- Grilled razor clams, hoja santa pil pil, lardo
- Raspberry and rhubarb flan
