Agave cocktail fans will have a new reason to get excited about Notting Hill, with the news of Viajante87’s opening. It’s a cocktail bar from the founders of Los Mochis, who have not been shy with new launches lately. Heading up the innovative mixology lab (something we all wish we had at home) is bar director Panos Kanatsoulis, formerly of The Clumsies in Athens, currently number 19 in the World’s 50 Best Bars list, so consider our interest piqued.
Inside, there’ll be velvet stools and banquettes in an agaveria-meets-izakaya vibe, complete with a hand-carved totem and a 20-foot backlit bar of recycled glass.
It will have a 2am licence, with DJs playing tribal house beats while you enjoy 100% agave-based cocktails, such as Cherry Blanco (tequila blanco, sour cherry marmalade and clarified coca-cola) or Viajante Martini (tequila reposado, bell peppers, fermented mead and green-tea sherry).
But of course, we are all about the bar snacks here at Hot Dinners, so while we’re impressed by Viajante87’s zero-waste ethos and cocktails made with waste ingredients, our thoughts turn to the Mexican-Japanese theme and the menu plans of restaurateur Markus Thesleff. You can expect crispy rice topped with spicy salmon, guacamole and fresh truffle along with wagyu sandos, kushiyakis and sashimi.
