In a nutshell: Adam Handling takes on the food side of things at Belmond's flagship London hotel
Summing it all up: From Shoreditch to Sloane Street, Adam Handling's rise has been meteoric. At their English countryside hotel Le Manoir Belmond picked Raymond Blanc, now they're putting all their resources behind Handling at their flagship Knightsbridge hotel.
The low-down
Wunderkind Adam Handling is the person taking on the challenge at the prestigious hotel chain's flagship London property - and now he's revealed exactly what's coming to the hotel.
Handling's no stranger to the hotel scene - his first Scottish job was as a trainee at Gleneagles and he opened the Caxton Grill at the St Ermin's Hotel. Since then he's been busy opening The Frog restaurants in East London and causing a stir on social media because of this memorable Giles Coren encounter. In his role as Executive Chef here, he'll run everything from the main restaurant which will feature an open kitchen – through to The Bar and Terrace, accessed directly from Pont Street.
Here's what he has planned:
In the Cadogan Tea Lounge, he'll be serving up his take on afternoon tea. "I want it to feel like there’s food in abundance so there will be cakes and chocolates and cookies everywhere. It’s that childhood feeling that most of us will remember, and that experience and sense of nostalgia I want to recreate". Plentiful cakes, yes we'd be up for that.
And he'll be behind the breakfast too. That will include with a box filled with freshly made croissants, pastries, bread, and crumpets as soon you hit the table - and they're specifically working on mastering a perfect croissant.
