He's had a lot of success with Cornerstone and now Tom Brown is getting his second restaurant ready, the seafood-led Pearly Queen in Spitalfields (taking over from The Space on Commercial Street).
Billed as both an oyster bar and a restaurant, UK-sourced oysters will be a big thing on the menu, both fresh and grilled, and there will be regular oyster specials like crispy buffalo oysters with a ranch dressing. Alongside those will be seafood platters as well as snacks like prawn scotch egg, terrine of octopus, tuna and parmesan gougères and shellfish hummus.
As for main courses, those will include:
- Grilled lobster served in XO lobster butter
- Whole plaice in a roast chicken sauce
- ‘100-layer’ cuttlefish lasagne.
The drinks sound just as interesting, with Three Sheets bar's Max Venning in charge. Leading that list will be the Pearly Martini - made with vodka or gin, Picpoul and a pearl onion. And there will also be Guinness, of course.
