In a nutshell: The Lyle's team's next big thing
Summing it all up: The people behind Lyle's open their second restaurant in Borough called Flor. This time it's part wine bar and part bakery.
The low-down
It's currently one of the World's 50 Best Restaurants (no 38 on the list) and now the team behind Lyle's are planning on opening their second restaurant. Flor will be a wine bar, bakery and restaurant by Borough Market, taking over the space that was Patisserie Lila.
The two-floor space described as "the little sister of Lyle’s" will be an all day affair inspired by the buvettes of Paris and the pintxos bars in San Sebastián.
As you come in there'll be a bakery counter - they're promising sourdough loaves made from Dorset wheat, milled in-house at Lyle’s along with pastries galore including brioche filled with sourdough caramel, birch syrup Kouign-amann, seasonal Danishes and a raw cream bun.
Take a seat downstairs at the counter, or head upstairs where there'll be banquette seating. Dishes promised for the menu are:
- Cured Mangalitsa and Comté sandwich in fermented potato bread
- Raw scallop with preserved gooseberry and green tomato
- Burrata, grilled bread and salted tomatoes
- Whole Dover sole, capers and wild marjoram
- Mussel, Spenwood and Vin Jaune flatbread.
- Lamb ribs with yoghurt and black lime
- Chocolate sabayon tarts or loganberry fools for dessert.
They're also promising their first brunch menu on Saturdays with dishes like "coddled eggs with trout roe and za’atar", "purple sprouting broccoli with cured egg and kipper butter"; and "eggy bread with maple and black pudding". Now that's going to be popular.
