"Colossal greed emboldened me to try pork collar marinated in koji (a fermentation agent), grilled and dressed with tare sauce and served with salted turnips. It’s a funny cut, packed with piggish flavour, but composed of at least three textures of muscle and lots of interesting connective physiology. Someone with a penchant for homogeneous premium cuts might not get it, but the chef clearly does. I ate it with my eyes shut in rapture."
