Yet another pop-up is on the way designed to highlight food waste, in the form of Rubies in the Rubble’s open sandwich pop-up. The pop-up, which will be based in Selfridge’s Food Hall, will pair the brand’s condiments, like their banana chilli ketchup, with sandwiches full of produce that’d otherwise be binned.
The ‘bread’ will also be made of salvaged waste, handmade from the pulp of rescued fruit and veg into high-fibre crackers in plenty of creative flavours, like turmeric and carrot, or kale and spinach.
Try:
- Pulled beef and pickle with aquafaba mayo on beetroot and ginger cracker
- Spring Veg & Blue Cheese on kale and spinach cracker
- Avo & Beet Houmous with nigella seeds and pink onion relish
- Nut butter & Banana with banana and chilli ketchup on turmeric and carrot crackers
The sandwiches will cost £5 each, with an optional add on of salad of the day for £1.50. The Rubies in the Rubble pop-up will run for one month, as part of the Open Sandwich pop-up event in Selfridge’s Food Hall.
