Cycene is the new restaurant from Blue Mountain School

Shoreditch's Blue Mountain School was once home to Maos, a Michelin-starred restaurant launched by Nuno Mendes and which had an experience primarily centred around a single dining table. The pandemic caused more than a few problems with that setup and while they tried to adapt the theme with a new-look space, the restaurant closed earlier this year. 

Now, the restaurant that will be replacing it has been announced. Cycene's head chef is Theo Clench, previously of Akoko and Portland and, like Maos before it, the restaurant will be based around a single menu (10 courses in this instance, adapting through the seasons). The menu will take its influences from Eastern Asia and Australasia primarily, while seafood will also be a big focus. 

The whole experience will be on two floors, starting with the downstairs bar for cocktails and aperitifs before moving into the restaurant (a similar setup to the new-look Kitchen Table and a few Michelin-starred places outside of town). There the layout will be similar to the most recent version of Maos - 16 people only with separate tables for up to four people each. 

A few dishes have been announced, including:

  • Devon crab, white kombu and green tartlet
  • Carlingford oyster with cucumber and kaluga caviar
  • Mackerel with plum, shisho and dashi
  • Slow-cooked Turbot, lettuce sauce, sake and oscietra caviar

On top of that, there is a private dining room for six if you fancy your own space.
