Samyukta Nair, the restaurateur whose group is behind other Mayfair hits Jamavar, MiMi Mei Fair and Bombay Bustle as well as the upcoming venture with Claude Bosi called Socca, is getting ready to launch another addition to her Mayfair restaurant empire.
Japanese restaurant Koyn will be her latest launch, just off Grosvenor Square, and will take full advantage of the redevelopment of the space around the former US Embassy (like the recent opening of The Twenty Two).
In charge of the kitchen is Executive Chef Rhys Cattermoul (previously at The Greenhouse and Nobu). Alongside sushi, sashimi, there will be:
- Hojicha-smoked lamb marinated with spicy kuromame miso, hispi cabbage grilled with homemade koji dressing
- Wagyu ishiyaki, on a sizzling hot stone, served with Koyn's Yakiniku Sauce.
- Lobster tempura sushi roll with chargrilled red pepper & creamy yuzu lemon
- Steamed clams ‘nabe’ with cordycep mushroom, yuzu sake soy, spinach and samphire
- Red mullet tempura with yuzu kosho tosazu and homemade kombu salt.
As for the look of the place, the restaurant will be designed in two distinct ways. The lower-ground floor will be called "Magma", designed to represent a volcano, with a black ceiling, burnt orange stools and the robata grill taking pride of place. The ground-floor room will be called "Midori" - designed to be green, and lush like an alpine scene where the sushi will take centre stage.
It sounds like it should be as striking as MiMi Mei Fair was - so we await this one with interest.
