Popham's Chef de Partie Jack Padoan is getting ready to kick off his newest venture, Hotel Savioli, as a pop-up at Hackney's Silver Lining. It's all starting with one hell of a sandwich.
Hotel Savoli is inspired by the hotel that the chef's late Great Aunt and Uncle ran in Riccione and the aim is to focus on modern British fare. The pop-up centres around a key sandwich: a brioche bun filled with smoked ox tongue and panko-crusted cod cheeks, topped with rich bone marrow aioli and horseradish. That sounds truly a sandwich worth walking across town for (as far as the new "stay local" rules allow).
There's also a special Every Cloud Bloody Mary, designed to go with the sandwich. You will definitely need that too.
It's all starting as a collection-only pop-up but expect to see the Hotel Savioli pop up in more residencies and superclubs throughout the year.
