In a nutshell: Popular cookery school from San Sebastian opens in Borough Market

Summing it all up: This Basque-based cookery school is making the move to London's Borough Market for its first UK branch, and it's bringing with it classes to help you master pintxos, paella and more Mediterranean classics. 

The low-down

Award-winning Basque cookery school Mimo will open its first UK base in Borough Market this spring, where you'll be able to learn everything you need to know to produce authentic pintxos, tapas and paella in your own kitchen. 

Mimo's London branch will be on 1 Cathedral Street, right in the heart of the market The Borough Market base will be their fifth branch after their other outposts in San Sebastian, Mallorca, Seville and the Algarve. 

Cookery classes are themed around different local areas, and include “Pintxos of the Old Town” which will teach you how to conjure up authentic dishes like prawn skewers and slow-cooked beef cheek. Or, go for "Paella & More" which includes a recipe for Galician octopus and gazpacho, while “Traditional Portuguese” will show you the secrets to making a top Pastéis de Belém.

All of the classes feature welcome drinks, ingredients - many of which will be sourced from Borough Market, naturally - and of course, a hearty multi-course feed at the end, where you can enjoy the fruits of your labour with a hard-earned glass of wine.  

The classes are priced at £175 for four hours, so definitely more on the 'special treat' end of the scale than an activity for a rainy day. 

On top of the classes, there'll also be wine tasting, chef's table experiences and dining experiences, from express mid-week 'lunch hours' with wines and aperitif preparations, at around £35, to more full-on, multi-course meals.

The cookery school is led by Joseba Lasa, formerly of Urban Caprice Holdings.
