The low-down

With everyone else talking about Veganuary, it's refreshing to bring you news of a new meat restaurant, particularly with its focus on local and British produce and sustainability.

Roadkill Butcher & Grill opens in The Stables Market this week. And they're all about supporting ethical farming practices with a street food slant. Of course, that starts with the meat - which comes from rare breed cattle, sourced from Charles Ashbridge, at Taste Tradition in North Yorkshire. It's grass-fed and hung on the bone for a minimum of 35 days as well as free from antibiotics, growth hormones and chemically enhanced feed.

Other stuff comes from closer to home - so the cheese is from East Sussex, the vegetables from Borough Market and the bread from Hendon. As for the grills they'll be using British made OX grills and charcoal, timber and waxed timber firelighters from Walton-on-Thames.

The menu's short and to the point. There's an Aged Dexter Bacon Cheeseburger (£12.50), 35 Day Aged steak with beef dripping fries for £12.50 and a steak salad or a steak baguette for a tenner. Breakfast bacon sarnies are in the offing too.

It's the brainchild of Matthew Gregson-Jones who co-founded it with his partner Jamie Patel. They hope that by using local seasonal produce in a street food setting they can give Londoners a restaurant experience without costing the earth.

And that sustainable promise extends to every part of how the business operates. In an effort to avoid food waste, all bones are roasted to make the bases of all sauces, while the beef fat creates dripping for the chips. Plus they'll be butchering all their meat on-site.

If all this sounds like something you'd like to have a go at yourselves, they'll be offering customers butchery courses on the cuts, trimming, preparation and what to look for when buying meat – as well as a meat home delivery service. It's mainly take-out but with tables in the market just outside, it's going to be an easy place for lunch or an early supper too.

If all goes well with Camden, there are plans to branch out elsewhere in London with four more stalls and a butcher's shop in the works.
