Boath House
Highlands - Auldearn, Nairn IV12 5TE
As you might expect, this Scottish retreat from the team behind Sessions Arts Club is quite the looker. Set in a Grade A listed Georgian mansion, The Dining Room here is run by Head Chef Philip Mcenaney (ex-Trinity and Whatley Manor) who's making full use of local producers - the crab is from Nairn harbour while hogget comes from the Cawdor Estate a 15-minute drive away. There's also a cafe in the walled garden serving up sharing plates and wood-fired pizzas.
Bedrooms: There are nine rooms in the main house along with a four-bedroom lodge and two one-bed cabins in the grounds.

The Stag & Huntsman
South Oxfordshire - Hambleden, Henley-on-Thames RG9 6RP
Set on an estate just outside Henley on Thames this lovely pub has been taken over by the Sika Inns team (David Holliday and Alex Sergeant are ex-Harwood Arms). They've brought in chef Dom Robinson who was most recently Group Executive Chef for Claude Bosi. Robinson's menu features game from the estate on an unfussy menu with scotch eggs and a great burger made with fallow deer.
Bedrooms: There are nine rooms along with two self-catering cottages sleeping between four and six. All are dog-friendly.

W Edinburgh
Edinburgh - 1 St James Square, Edinburgh EH1 3AX
If your idea of a fun weekend away is a nonstop party city break then the W Hotel in Edinburgh should be on your hit list. Not only is the hotel extraordinary to look at but it also features an amazing rooftop bar and terrace (with heated igloos for colder Scottish nights) boasting views across Edinburgh. For food, head to the newly-opened Scottish outpost of SushiSamba and finish with drinks at their Brazilian speakeasy bar, Joao’s Place.
Bedrooms: 244 in total including 45 suites. The Wow suites have terraces overlooking the city.

The Rectory
Cotswolds - Crudwell, Malmesbury SN16 9EP
Although this Wiltshire hotel isn't new (and the building certainly isn't, dating back to the early 18th century) the brand new kitchen team now makes this a foodie place to check out. Jake Simpson comes here via a long stint as head chef at Bocca di Lupo and has brought with him sous chef James Erasmus (ex-The Ledbury and Harwood Arms). Expect to find locally sourced produce on the menu alongside herbs and veg from the hotel's own kitchen garden.
Bedrooms: There are 18 bedrooms (three of which are in a cottage in the grounds). Look out for the honesty bar stocked with scotch and cognac for late-night snifters.

The Abbey Inn
Yorkshire - Byland, York YO61 4BD
Chef Tommy Banks' northern empire continues to grow with The Abbey Inn the latest opening for the group. Named after the Byland Abbey ruins beside it, the pub serves up a hyper-local menu including a must-try Byland burger made with Dexter beef reared on the family's own farm.
Bedrooms: There are three lovely rooms here with roll-top baths and minibars stocked with the Bank Brothers canned wine range.

Cowley Manor
Cotwolds - Cowley, Cheltenham GL53 9NL
The newest owners of this 17th-century manor house are French-based The Experimental Group. They've brought in chef Jackson Boxer to lead the kitchen team here. His menu mixes European influences while plundering the local larder, so expect dishes like Tarte Flambée with truffles and locally-produced Rollright cheese. Obviously, the bar is great too with inventive cocktails and a DJ in the evenings
Bedrooms: There are 31 rooms in total ranging from family rooms with four posters to suites overlooking the lake.

Ashlack Hall
Cumbria - Grizebeck, Kirkby-in-Furness LA17 7XN
Ballymaloe-trained chef Bob Keegan and his partner Jenna Freak have taken over Keegan's 17th-century family estate with their farm-to-fork experience. The food on the weekly changing set menu is mainly from their own farm and is served family-style around an impressive banquet table.
Bedrooms: There are three gorgeous rooms on site, a West Wing suite, Bridal Suite and Attic Room.

The Bell
Cotswolds - 1 Church St, Charlbury, Chipping Norton OX7 3PP
Not to be confused with Charlbury's other enticing Inn, The Bull, this is the latest opening from Daylesford Organic. As you might imagine it's had a lot of love (and money) lavished on it. In addition to the pub, which serves up hand-raised pork pies and Hereford steaks with rosemary fries there's also a separate restaurant, The Barn, with a wood-fired grill at the centre of its menu.
Bedrooms: There are 12 beautifully-decorated rooms in total including a two-bedroom family suite.
