Two years after opening their hugely popular Filipino bakery Panadera in Kentish Town, the powerhouse duo behind that and Mamasons, Bintang and Guanabana are heading to Carnaby for their next restaurant.
Donia is taking over the space in Kingly Court left vacant by Imad's Syrian Kitchen's departure. Hot Dinners tracked down co-founder Florence Mae Maglanoc, who's in charge of this particular project, to get a bit more info.
"The concept involves hand-crafted dishes using the finest local British produce," she told us, "marrying the heartfelt warmth of Filipino cuisine with the sophistication of modern British culinary arts."
In practice that means dishes like:
- Prawn and pork dumplings topped with white crab in a brown butter lime sauce & chili oil
- Crispy roast pork with 'Mang Tomas' liver peppercorn sauce
- Chicken Inasal served with a butter emulsion
It's going to be an all-day place that she and her business partner Omar Shah are super excited about. "[Carnaby] is a great location and it was the perfect site for the Maginhawa group to launch a new brand. "It's about crafting a menu that's familiar yet surprising, and above all, delicious."
