Wagamama’s Noodle Lab has returned to Soho

Good news for fans of Wagamama’s Noodle Lab. Having closed in Soho’s Dean St in 2020, citing pandemic business-viability reasons, before resurfacing in Old Street in 2021, it’s back to Soho again, this time to Wagamama’s Great Marlborough St restaurant location.

You’ll consider it worth chasing around town if you’re the kind of person who wants to be first to try the restaurant’s brand-new creations as they’re recipe-tested. Wagamama’s Noodle Lab is also promising a series of collaborations with some of the UK’s boundary-pushing food innovators in the coming months. They’re also keen to focus on sustainable options that respect the UK’s overall food landscape.

There’s space for 120 diners on Wagamama’s signature wooden shared benches and things look particularly welcoming for vegans, if the first tranche of their experimental creations is any indicator.

While the Wagamama classics are still available for the diehards (hello katsu curry and yakisoba), here’s a selection of what the Noodle Lab is serving up to curious palates:

  • Vegan ‘pork’ tonkatsu with cabbage slaw mixed with white miso and mustard dressing, topped with sesame seeds and red chilli
  • Vegan K-dogs (two plant-based Korean corn hot dogs coated in a noodle crumb, drizzled with sriracha and turmeric vegan mayo and topped with chilli, coriander and red pepper powder)
  • Tokyo fries: sweet potato fries in Korean sauce, vegan mayo and sriracha to be topped with a choice of aubergine and caramelised onion, barbecue beef brisket or barbecue chicken
  • Vegan ‘pork’ buns made from breaded jackfruit
  • Wok-fried greens: cauliflower stems and leaves fried with garlic and soy sauce
  • Chouxnuts: a meld of donuts and choux pastry in a light bun with a custard filling choice of either sweet matcha or kuromitsu (black sugar syrup)

On the drinks front, the Noodle Lab is an exclusive outlet for Hawkes Dead & Buried cider, but will also cater for cocktail drinkers, notably offering an adult version of a float called the Power Sorbet Spritz: Roku gin and sparkling water with a scoop of power juice sorbet.
