It's all change at Ruby's in Dalston on the food and drinks front as they unveil Corrochio's. It comes from Daniel Corrochio, a man who has run Ruby's itself before and now finds himself in charge of their food and cocktails.
Corrichio's leans on his heritage, with a menu of Mexican dishes matched with Mexican spirits and cocktails. Planned for the menu are:
- ‘Aspirins’- mini sope corn canapes filled with 8-hour cooked lamb barbacoa
- Crispy grilled vampiros, with roasted salsa & manchego cheese, topped with either pork pastor, cactus, lamb barbacoa or huitlacoche aka Mexican truffle
- Roasted beef & bone marrow with salsa verde on blue tortilla taco
The drinks menu features a range of Tequila, Mezcal, Sotol and Raicilla - all of which also find their way into his cocktails. Frankly, we love the sound of the Mexican Brunch cocktail - that's homemade hibiscus jam, egg white, fresh grapefruit & tapatio tequila with a crème brûlée top. The last bit certainly sold it to us.
Mexican food has come a long way in London over the past few years and this really does look like it's adding something new - should be well worth a look.
