Summing it all up: Combining Puglian pizza know-how with Indian inspiration, this new Tufnell Park pizzeria is hoping to woo folk with their fusion pizzas.
The low-down
If the phrase 'fusion pizza' strikes fear into your hearts, then the owners of a new pizzeria opening in Tufnell Park are hoping their new concept will win you over.
Local restaurateur Devinder Singh is taking over the old Stingray spot on Fortess Road and opening East West - a pizzeria that's bringing together southern Italian-style pizzas with the home-cooked recipes and flavours of northern India.
If you can't imagine what that means, he'll be serving up pizzas like:
- Butter Chicken - with semi-dried tomatoes, truffled oyster mushrooms and fennel pesto
- Masala Jackfruit - with black olive tapenade, grilled peppers and grilled peppers
- Saag Paneer pizza with grilled artichoke and crispy onions.
It's not just pizzas that get the fusion touch, other Indian takes on Italian favourites include:
- Paneer Bruschetta with roasted masala tomatoes
- Murgh Kofta Polpetta made with Punjabi chicken
- Arancini including paneer, tandoori chicken and butter chicken stuffed variations.
Desserts stick more to the Indian theme with Gajar Ka Hawla taken from Devinder’s dad's recipe and Gulab Jamun Parfait - sweet paneer dumplings soaked in sugar syrup with honey saffron cardamom cream.
As for drinks, they go down the fusion line too with options like a Chai Martini made with chai infused cream liqueur and a Punjab to Moscow Mule using small-batch eastern spiced ginger beer with galangal citrus syrup and vodka.
"I’ve always been a huge admirer of how Italians from the southern regions, Puglia in particular, make their pizza," explains Devinder, " and the light and gentle base found throughout the area provides the perfect stage for punchy Indian flavours.
