In a nutshell: Riverside Richmond restaurant gets Masterchef winning chef
Summing it all up: Popular Hove restaurateur Steven Edwards is expanding to London, taking over the restaurant at the Bingham Riverhouse with his seasonal British menu.
The low-down
His Hove restaurant Etch has been getting rave reviews since it opened in 2017 - the Independent called it "an inventive, transporting and above all immensely enjoyable dining experience". Now MasterChef: The Professionals winner Steven Edwards is heading to London.
He'll be taking over at the Bingham Riverhouse, overlooking the Thames at Richmond, for his first London restaurant. There he'll be running Steven Edwards at Bingham Riverhouse (alongside still working at Etch).
But while Etch is known for offering only a tasting menu, the Bingham will be a la carte. To give you an idea of the kind of seasonal British food he'll be serving up you might find the following on the menu:
- Crab mayo with crab jelly and caviar
- Guinea hen with cauliflower cheese and nasturtium
- Kale Doughnut with broccoli puree and gherkin
- Granny Smith apple crumble panna cotta with apple sorbet and marigold
- Poached Williams pear with pistachio and coriander ice-cream
That said, Edwards is reverting to the tasting menu concept for Sundays. The Sunday Experience is a five-course tasting menu with dishes like white onion espuma with Welsh Rarebit and a salt-baked pork rump with pickled pumpkin on offer.
Bingham Riverhouse’s Manager Erick Kervaon is clearly happy to have him on board, saying: "Steven's dish innovation and eye-popping presentation is inspiring."
