The low-down
Back in April, we bought the news that the owners of Caravan were to be opening in a very impressive new building in Duke of York Square in Chelsea. The founders teased at the time that it would be a new brand rather than Caravan and it’s now been revealed that they will indeed be launching a brand new concept in the space, called Vardo, which is due to open this autumn.
The restaurant has been designed by Nex Architects and it's pretty eyecatching. The spiral building is topped by a public roof garden and features the UK’s first fully retractable glass wall, allowing the restaurant's wall to sink completely into the lower ground floor, so the restaurant becomes practically entirely alfresco on a sunny day.
The name Vardo comes from the Romani travelling wagon of the 1800s, a caravan of sorts, and the menu sounds like it will be globetrotting in nature too. Open all day for breakfast, lunch and dinner, dishes we expect to see include:
- Slow braised carrots, brined mustard greens, aji blanco
- Charred aubergine, saffron buttermilk dressing, grilled Turkish chilli
- Baharat rubbed lamb cutlets, green harissa, tahini
- Green baked eggs with lentil, pine nut and kale ragu, cumin yoghurt, charred pepper salsa
With all of Caravan’s current restaurants located in central and east London, this will be the team’s first journey west. We’ll bring you more info closer to launch time.
