The low-down
We're longstanding fans of Salvation in Noodles so the news that owner Colin Tu has another new restaurant planned is what we'd call A Good Thing. Here's what you need to know.
It's not actually pronounced MAM
In the way of the London restaurant scene right now (cf Xu) you need to know that MAM is actually pronounced mum and means fermentation in Vietnamese. It's also a reference to the fact that Colin's actual mum's homemade fermented dipping sauce, made with shrimp paste and pineapple, is going to play big on the menu.
All the 'cue
Colin's keen on taking back inspiration from his travels in South East Asia and MAM is no different. His new Notting Hill restaurant is inspired by barbecue street food stalls found all over Vietnam. There'll be a lot of skewers cooked on a robata grill.
It's mainly about chicken
Most skewers will focus on various bits of the chicken but there might also be some rare-breed beef and seafood as weekly specials.
But it's not all skewers though
Other dishes we're told to expect include Hanoi-style pho, rice bowls topped with braised short rib or pork belly and egg, as well as classic Vietnamese starters.
Don't worry the fish sauce chicken wings still feature
We've had these at SIN and they're brilliant, so it's good to know that wings will also be on the MAM menu.
