Pimlico's Roussillon gets new Michelin-starred Head Chef

shane hughesRoussillon restaurant in Pimlico has appointed its second Head Chef in just over a year. The new man in the kitchen is Shane Hughes. Shane arrives in the city after five successful years of running the kitchens at Ynyshir Hall in Wales where he was awarded a Michelin star for the past three years.

Roussillon first rose to fame as a restaurant under Alexis Gauthier. When Gauthier moved to open his own restaurant in Soho his place was filled by the youthful Dan Gill, a 23-year-old chef who came to London via Midsummer House and Le Manoir Aux Quat Saisons.

We rather like the sound of Shane's menu which includes such dishes as Pig & Crayfish, slices of braised pigs head, crayfish, artichoke, pumpkin seed, cider vinaigrette; Beef & Lobster, spiced shin tortellini, Cardigan Bay lobster, young vegetables & truffle emulsion and Chocolate Croquette, passion fruit and mango espuma & bay leaf ice cream.
