Hoxton's Rapsa has made a move into the centre of London - as a pop-up in the Selfridges food hall. The Filipino restaurant has launched a six-week pop-up in the food hall, with a focus on Filipino tacos and frozen cocktails.
It's led by chef Francis Puyat (previously Ottolenghi and NOPI) who says "“Filipino cuisine has some of the punchiest Asian flavours thanks to our native kalamansi limes and our ube purple yam. Not only do they help make the flavours in our food really pop, they also work really well in drinks. Thanks to our exposure to Spanish and American cuisine during colonial times we share their appreciation for Mexican food, especially tacos"
Here's a taste of their pop-up menu:
- Pork Lomo Chicharron Taco - pork loin, Pinoy sweet chilli, avocado salsa & pork crackling
- Chicken Afritada Taco - braised spiced tomato Pinoy speciality topped with chicken crackling and avocado salsa
- Aubergine Adobo Taco (Vegan) - sweet & sour marinated slow roasted aubergine garnished with avocado salsa & crispy onions
- Pinoy Colada - Ube Coconut married with the vanilla tones of Filipino rum Don Papa 7yr.
More cocktails and alcohol-free drinks will also be on offer - including Halo Halo Yamboree - purple yam infused coconut milk, topped with jellies and sweetened with vanilla.
