With all that happening in and to the world of hospitality, folk in that industry could be forgiven for wanting to just hunker down, let the maelstrom pass them by and hope for better times ahead.
That's certainly one way of dealing with being in Tier 2 in the middle of a pandemic. Alternatively you could do what restaurateur Jackson Boxer has done and add more to your to-do list by opening a brand new bar.
Not just any bar though. Jackson spent this weekend opening a dive bar in the cellars underneath his restaurant Brunswick House - a fact he announced with this matter of fact tweet.

Talking to Hot Dinners about it he told us: "Now Tier 2 has seen all our tables, even big ones, mostly just reserved by couples, we felt like we needed more space. Also we're really tired and frustrated by the ongoing aggressions against our industry, and wanted to do something beautiful and fun and positive and optimistic."
The space does look pretty much perfect for a dive bar. As Jackson explains: "The cellars of Brunswick House are extraordinarily beautiful and atmospheric, dating back to the 1750s. We will be booking spots down there for wine, cocktails, snacks and small plates from 5pm to close, Thursday to Saturday for the time being."
