Mitsuhiro Araki's tiny restaurant - just nine people up at the dining counter and six in a private dining room - became one of London's rare three Michelin-starred restaurants. But the chef has now returned to Tokyo, leaving his sushi apprentice turned head chef Marty Lau in charge.

"Yet it is remarkable, and not just for the ingredients. What was most impressive about Araki on his opening night was how confidently he negotiated the tasks involved in serving 99 dishes, aided only by one assistant, two waitresses and his wife Yoko (whose father grows the rice, in Saitama prefecture, that Araki uses in the restaurant)."
