Bhoga chefs kick off guest chef spots at Zoilo

A season of guest chef residencies at Zoilo kicked off last night and if the first one is anything to go by, you need to get booking, fast.

The series aims to highlight the different cultural influences on Argentine cuisine. For the first takeover Chef Patron Diego Jacquet invited his friends Niclas Yngvesson & Gustav Knutsson from Bhoga in Gothenburg into his kitchen. Much-lauded Bhoga opened in 2012 and received its first Michelin star earlier this year. Young chefs Niclas and Gustav (formerly of The French Laundry and The Fat Duck) came up with a menu for their London stint which looked at Swedish influences on Argentine cuisine.

Which is how Hot Dinners found ourselves last night trying such delights as grilled lobster with lingonberries snow and a pre-dessert of madeleines with rosemary scented condensed milk and crispy pig skin. The six course menu was a frankly unbelievable £39.95 and if you're down there for the last night tonight, we'd recommend going for the wine pairing which is a bargainous £19.95 - the pinot noir match with that lobster dish was inspired.

Although they're fully booked tonight, with just a few seats available for walk-ins, there are other guest chef residencies planned. On November 27th & 28th they're welcoming Diego Cardoso, former head chef of Murano and in Spring there'll be a chance to try the food of New York wunderkind Marcus Samuelsson of Red Rooster Harlem.
