Wild Game takes over the residency at the EnduranceThe Endurance in Soho continues to set the pace for pub residencies with their latest announcement. Taking over for a three month period will be The Wild Game, who will be serving up venison and game to Soho pubgoers.

The Wild Game is founded by Andy Waugh, who will be sourcing the meat for the residency from his own familiy's game butchers near Inverness. He'll be working with Ruaridh Emslie, who has previously done stints with the Bonnie & Wild and Seagrass pop-ups. Working together, they are best known for their street food stalls for which they were winners of "mobile mover and shaker" at the YBFs earlier this year.

At the Endurance, they'll have a changing seasonal menu on which will be things like pulled boar cooked in honey, soy sauce and star aise, loin of venison chateaubriand with rosemary potatoes or sticky BBQ Ribs with Burnt Lettuce and Courgette.

There will also be a collection of smaller plates like deep-fried pheasant, rabbit hot wings cooked in white wine or Partridge in a Pear Tree, featuring confit leg and honeyed pan fried breast with a pear, walnut and blue cheese salad. You can also expect their popular venison Burger Dumplings and later in the year a special Christmas menu.

The Wild Game at the Endurance starts on November 1 at the Endurance on 90 Berwick Street, W1.
