Top pop-up chef Laurent Quenioux comes to London to pair with Chateau MarmotNews reaches us of a top LA chef who will be repeating his west coast of America pop-up experiences on this side of the Atlantic. The chef is Laurent Quenioux who has been popping up all over Los Angeles and is now joining up with European pop-up Chateau Marmot at a secret east London location.

Quenioux is a member of the "French Bistronomy" movement, worked at two Michelin starred L’Oasis in Cannes before moving to LA to open The Regency Club. Now he runs regular "Foodings" in LA, often popping up in his own bistro or in odd locations like the roof of Barney's, and he's bringing over the team that tuns those to the UK.

Most recently, he's been creating menus with dishes that included - among others:

  • "Pigeon (Unilateral Cooking Method), Watercress Varnish, Corn & Shelling Beans"
  • "Succotash Calisson Ice Cream, White Peach Cinnamon Espuma, Bacon Meringue, Smoked Blis Salmon Roe."
  • "Aji Sweet Potato Hamachi, Sea Urchin Smear, Carlsbad Oyster, Bliss Smoked Steelhead Roe, Tosaka Ice cream, English Pea Gazpacho, Chervil Leaves"
  • "Lamb Loin “Parmentier”, Banana Mash, Confit Spring French Shallots, XO"

In the UK, he'll be using local and seasonal British produce cooked with his "signature mix of classical French training and cutting edge world fusion techniques" There will be six courses for £49.50 with a cheeseboard, with an optional wine flight from £26 (or beer, cocktails or soft drinks if preferred). 

LQ @ Chateau Marmot runs from October 31 to November 8 with a couple of brunches too and a special closing dinner on November 14 which sees him collaborating with the Chateau Marmot chefs, including Ottolenghi's Ramael Scully.
