Perth eco-restaurant Greenhouse to open in King's Cross

greenhouseperthIt's going to be a bit confusing, what with the existing Greenhouse restaurant in Mayfair, but eco-restaurateur Joost Bakker is determined to open a branch of his popular Australian restaurant Greenhouse in London this year.

The aim of the original Perth-based restaurant (they also ran a pop-up restaurant in Sydney this year) is to create no waste at all. So expect vegetables grown on the roof and for them to carbonate their own water in order to make lemonade and cola on site.

In a post on his Greenhouse blog Bakker says; 'I have recently returned from London where I took a look at some very exciting sites for the next Greenhouse installation which will be the first Greenhouse by Joost location outside Australia.

According to The Australian, Bakker has plans to put British chef Douglas McMaster, who was BBC Young Chef of the Year in 2009, in charge. McMaster has been in the foodie spotlight in Melbourne recently for his Wasted dinner in which all the food served up was the food that restaurants would normally throw away - sheep's brain fritter anyone?

London's Greenhouse should open in Kings Cross in the old Granary Complex, party of the new Central Saint Martin campus, sometime later this year.
