Over in South Kensington, rib restaurant Crib de Rib is aiming to be "more than just a rib shack" with a completely new menu courtesy of a chef from La Bodega Negra.
What to expect from the Crib de Rib revamp
The head chef, Rafal Kostecki has come from La Bodega Negra. His new dishes will include Crab tian, gazpacho sauce served with avocado, tomato, gem lettuce & apple and rye bread as well as yellow fin tuna tartare accompanied by cucumber, sesame, baby leaves & roasted seaweed.
Mains will - of course - go heavy on the ribs. Those will include beef short rib, slow cooked then charcoal roasted served with Bourbon glaze, potato mousseline and rack of baby back pork ribs accompanied with a bbq chilli glaze, spring onions and house slaw. Or if you don't fancy ribs, there's red snapper “en papillote” served with soy, mirin, chilli, bok choi and coriander.
Cocktails come from mixologist Bastien Dupuy. They'll include Swallow (Belvédère vodka, fresh lime juice, fresh chili, blueberry liquor, grapefruit purée & pomegranate juice) and Le Fruit (Defendu, shaken Gin, Absinthe, lemon juice, bitters & Apple juice).
