Pipsdish launches Brioche burger popup in Covent Garden

briocheThe seemingly unstoppable burger juggernaut continues. Pop-up restaurateur Philip Dundas (whose Islington site has just been sold to MEATliquor) is handing over his West End Exeter Street site to chef and collaborator Callum Lench (ex Marco-Pierre White, Arnaud Lellement, and Scott Hunnel). It reopens today as a new summer pop-up called Brioche.

While burgers and buns are at the heart of the offer, Brioche will combine this with the PipsDish focus on local, seasonal, produce and sustainably sourced meat and fish. So slow food fast if you will.

They'll be serving up a range of burgers in brioche buns:

  • Ground Highland topside beef £8
  • Pulled barbecued Old Spot pork £8
  • Buttered Sussex White chicken £8.50
  • Confit Muscovy duck £8.50
  • Cornish fishcake of the day £8.50

Relishes range from lime and tarragon alioli to mustard pickled peppers and there's a choice of three cheeses - Laverstoke mozzarella, Cashel Blue or Mrs Kirkham's Lancashire. A short list of three extras include Dorset bacon, caramelised shallots or garlic mushrooms.

Sides will include coriander, courgette and cucumber slaw and sesame fried crispy cabbage & kale. The twice cooked chips will feature seasonal potato varieties and puddings are British favourites Eton Mess and Sticky Toffee as well as home made iced lollies during the the summer.

To drink there'll be beer or you can bring your own wine.

Brioche opens today at 15 Exeter St, London WC2E 7DT and runs until 30 August. Opening hours are Mon-Saturday 12-10pm, reservations on 0207 240 7232
