Michelin starred Indian restaurant Quilon in Westmister, which has been shut for a major reburbishment, is due to reopen at the end of March. Hot Dinners got a few scraps of info on the impending re-opening when we chatted to chef Sriram Aylur recently.
Both Quilon and Bombay Brasserie are owned by Taj Hotels, with Sriram responsible for both restaurants - he's now entering his twenty-fourth year working for the group. The changes at Quilon have pretty much consumed him over the past few weeks.
"We'll have a fully fledged bar for the first time, a new private dining room,' Sriram told us, "and we'll change and re-work the wine list too. We hope to re-open by the end of March."
There will be a few tweaks to the menu too by the time they re-open. "Around 40% of the menu will remain as it is, and we're still working on the rest of the menu"' Sriram said. "It's contemporised food from the west coast of India."
