The battle for London's vegetarians has begun. Launching in September on Eastcastle Street, just off Oxford Circus is Ethos.
Here's what you need to know about Ethos
It's fast-casual food: The self-service, fully licenced restaurant will have eat in or takeaway options, customers can build their plates with a variety of dishes inspired by different countries. There'll also be space to eat outdoors.
Dish inspiration comes from around the world: the intention is to serve healthy, ethical eating and interesting meat-free food. Dishes will include:
- Eritrean cucumber and mango salad
- Colombian crema de Aguacata soup
- Lebanese green bean and cherry tomato dish loubieh
- Dutch-inspired gevulde speculaas
There'll even be ribs on the menu: BBQ ‘ribs’ using seitan that is – a protein from wheat gluten.
As for drinks: The list will feature a range of juices, carefully chosen premium coffees and speciality teas.
