Copenhagen's Sticks 'n' Sushi chain opens first London restaurant in Wimbedon

sticksnsushiThere's an interesting new opening coming up in Wimbledon - the first offshoot of popular Copenhagen chain Sticks 'n' Sushi is arriving mid-March. They currently have nine branches in Denmark and despite the odd-sounding name and the oddball tagline of 'a sushi restaurant even for those who don't like fish' have a pretty hot reputation. London will be their first restaurant outside Denmark.

The key premise is that you can choose between sushi or yakatori. If the menu's anything like their Copenhagen spots you can expect salmon tartare with trout roe and miso, kaburimaki and beef tataki along with marinated chicken drumsticks with miso aioli, ponzu and chives. On the sticks side of the menu there's panko fried duck with wasabi caesar dressing, chicken meatballs with teriyaki sauce and beef topped with foie gras and a truffle glaze.

As far as fish sustainability goes their philosophy is that they're 'willing to spend that extra sum to obtain organically produced fish as far as possible, and that the salmon is not caught with nets.' That said they do go on to admit that they're not 'obsessed with correct attitudes to everything' illustrating that neatly by explaining that 'we don’t have the kind of toilet paper that scratches at one end and benefits the environment at the other.'
