The burger train shows no signs of slowing down with a new high-end concept landing in Charlotte Street (not too far from high-end hot dog restaurant Bubbledogs).
Their name is apparently short for "Bourgeois Bohemian, denotes the combination of the free-spirited artistry of the Bohemian with the worldly ambitions of the Bourgeois lifestyle." It comes from Michael Benson (Sticky Fingers, Palm Court Brasserie and Supperclub London) and Jacinta Maddison who's primarily looking after the design

The burgers will feature foie gras, Wagyu beef and more. They're pushing for a more high-end burger experience, so expect the combinations to reflect this. On the menu will be a Lobster & Crab Burger, a Peanut Butter Burger and a Waygu Burger with Ogleshield Cheese, Foie Gras, and Truffle Shavings. The burgers will be rare-breed beef from Sussex and "cooked in a Kopa Charcoal Oven which sears meat instantly at temperatures as high as 500°C, ensuring it retains its succulence".
There will be a weekly changing "Guest Burger" too. This is part of their Experiment Burger Society where, once a week, up to 20 people will work with the chef to create a new burger - with venison, kangaroo and ostrich options available besides the usual beef.
And there's more besides burgers. They'll have small plates on the menu which include Sea Bass Ceviche, with pomegranate, chilli, chive and lime dressing; Fillet Steak Strips, with avocado, chive and chipotle salsa topped with truffle shavings; British Feta & Marinated Watermelon, with heritage tomatoes, rocket and basil oil.
And desserts + dessert cocktails.The desserts will include Prosecco, Elderflower & Summer Berries Jelly, a White Chocolate Cheesecake with Lemon and Ginger, and a Dark Chocolate Salted Caramel Tart. Plus there will be dessert cocktails too - Rhubarb & Custard, Death By Chocolate Martini and Apple Crumble In A Glass.
