It's an undisputed fact that London's bar scene is among the best in the world. And with so much talent concentrated in one city, there's always the drive to innovate and come up with even more creative cocktails. The good news for both Londoners and visitors is that means we always have somewhere new and interesting to try on our doorstep.
Silverleaf at the Pan Pacific London opened its doors in February last year. Designed by Tom Dixon the East London bar was quick to showcase its credentials - one of its signature pours was a finalist in the incredibly competitive Class Bar Awards that year for Best Cocktail.
Now the talented team, led by Liam Broom (ex-Callooh Callay) has unveiled their first new menu since opening. Under The Lens embraces the fields of cocktails, art, science, and design and blends them. From imagery by microscopic photographer Karl Graff (the images show the DNA of the drink) to a menu created by a team that usually works in UX and UI design - every element is arresting.
Of course, none of that works without great drinks and the new menu has broken them down into four sections; Highballs, Ferments, Cocktails, and Silverleaf Signatures. Carrying on the Silverleaf tradition of championing two core ingredients, each section employs a different technique.
The Highball section is all about using 'flavourful waters' - creations made using fresh fruit that lengthen and complement spirits. Ferments focuses on preserved and fermented produce as drink ingredients and the Cocktails section uses heavier spirits and rare spices for challenging takes on modern classics. Finally, the Silverleaf Signatures showcases the bar's now-classic drinks including Pineapple|Miso which the Class Bar Awards judges loved.
New drinks include:
- Mango|Kampot - made using Plantation 3* Rum, Mango, Kampot Pepper and Saffron
- Raspberry|Vetiver - Suntory Toki Whisky, Raspberry, Ruby Cacao and Vetiver
- Corn|Cacao - Oxley Gin, Roasted Corn, Cocoa Butter and Vanilla
"The team has created an amazing menu," says Bar Manager Liam, "pushing the boundaries of cocktail craftsmanship even further." Sounds like an experience that those who take their cocktails seriously are going to want to try.
