Oak
Oxford - Bear Ln, Stadhampton, Oxford OX44 7UR
One of two new Crazy Bear restaurants coming in 2025, this sees chef Chris Emery in charge, who's previously worked at The Waterside Inn and Pollen Street Social. Seating just 40 people, it will focus on local and seasonal ingredients with dishes including steamed brill with scallop, fennel, celeriac & green curry sauce.

Moss
Edinburgh - 112 St Stephen Street, Edinburgh EH3 5AD
Moss comes from Chef Director, Henry Dobson who trained at both Ballymaloe and Noma. He's been getting this Nordic and East Asia-inspired restaurant ready over the past two years, with much of the furniture and ceramics created by him and his wife. They'll even serve duck smoked using shavings from the dining tables that he made.

Harry's
Rye - New Lydd Rd, Camber, Rye TN31 7RB
This restaurant is opening inside boutique Rye hotel The Gallivant and will be headed up by Chef Matthew Harris who was chef of Bibendum and happens to be the brother of Bouchon Racine's Henry Harris. The room is inspired by California while the food mixes seasonal produce with a French approach. Dishes include magret de canard with braised endive, orange and peppercorn sauce as well as a prune and armagnac crème brûlée.

Bear
Beaconsfield - 73-75 Wycombe End, Beaconsfield HP9 1LX
Most recently known for Amethyst in London, Carlo Scotto is now heading up the main restaurant at the five-star Crazy Bear hotel. It'll be a tasting menu experience, led by foraged ingredients and seasonal vegetables, described as an "adventurous and surprising take on the field-to-fork concept". The space itself will be a counter dining restaurant around an open kitchen.

Cordia Collective
Sussex - Borde Hill Ln, Haywards Heath RH16 1XP
This sees Apricity's Chantelle Nicholson opening a restaurant within the Borde Hill Grade II listed country estate, teaming up with wine expert Ruth Osborne and top baker Janine Edwards. There will be a cafe and workshop as well as a glasshouse restaurant (and a terrace) that will overlook the kitchen garden. The menu here will be very seasonal, led by the surroundings

The Cut & Craft
Manchester - 38-42 Mosley Street, Manchester M2 3AZ
Already a big deal in York and Leeds, this British steakhouse is expanding to Manchester where they've taken over a large Grade II listed building in the city centre. Expect everything from oysters and caviar through to lots of steak cuts.
Opening: Spring 2025
Pip
Manchester - Blackfriars Street, Manchester M3 2EQ
Part of the new Treehouse hotel, this sees ex-Fat Duck and Aumbry chef Mary-Ellen McTague taking one of their new restaurants for an all-day venture. There will be a specific focus on the produce of the northwest with a seasonal low-waste approach to both the food and cocktails.

Chotto Matte
Manchester - 36 Jackson's Row, Manchester M2 5WD
Already big in London, the next Chotto Matte is opening at the top of the new St Michael's development in Manchester. It'll be the group's biggest restaurant yet, fitting in around 450 people, with the covered roof terrace being a big draw. As for the food, expect the usual Japanese-Peruvian cuisine in a vibey setting.
Opening: Summer 2025
The Garden, Cobham
Surrey - Downside Rd, Cobham KT11 3LU
Following up the massive hit that is The Devonshire, Ashley Palmer-Watts will be opening a high-end restaurant, wine bar, cafe and bakery at this restored walled garden site. That garden will be supplying much of the produce too.
