Having just celebrated their 15th anniversary and with a new book being published this year, The Connaught Bar has never been more in demand. For pure theatrics, it's hard to beat a martini by Agostino Perrone and his team when the process involves not only picking your bitters but also witnessing the metre-high pour of vodka into the glass, spritzed by a lemon.

While all the cocktails (and bar snacks) are on point at the bar in the three Michelin-starred Core by Clare Smyth, you really shouldn't pay a visit here without asking for a trip to Irish coffee nirvana. Let bar manager Vincenzo Ciacco talk you through the various whiskeys and bourbons on offer, along with the bitters and choice of toppings before he puts it all together for you. It's more tray service than trolley service but let's not nitpick.
