It's been planned since late 2023 but now Stevie Parle is getting ready to unveil his new restaurant, Town in Covent Garden.
The chef, who in recent years was best known for his post-lockdown hit Joy, has brought in an impressive team to help with the new venture. Executive Chef Olly Pierrepont was previously Head Chef of Luca and La Trompette while Head Chef Andy Bright was previously at Kerridge’s Bar & Grill, Saison and Fera.
Here, there's a very much on-trend focus on British seasonality, particularly showcased in their team-up with Wildfarmed as the restaurant will be the first to use Wildfarmed beef.
As for what's on the menu. expect dishes like:
- Potato bread with Wildfarmed beef dripping
- East Kent asparagus with Mangalitsa lardo and aged cherry vinegar
- Seasalter clams, sherry and grass-fed butter
- Wood-grilled Romney Marsh hogget with Chianti and anchovy butter
- Morello cherry pie with cherry stone ice cream
There will also be Town Bar, with drinks by Kevin Armstrong of Satan's Whiskers, so expect the cocktails to be on point.
