It previewed at Carousel last year and now Chilean restaurant Mareida is getting ready to open, not too far away from Carousel in Fitzrovia.
It's founded by Prenay Agarwal (pictured above) who has lived in Chile for a year and wants to showcase that country's cuisine to London. To that end, he's brought in Head Chef Trinidad Vial Della Maggiora to run things in the kitchen who is, in turn, supported by Chef Carolina Bazán. Bazán's of interest because she was voted Latin America’s Best Female Chef in 2019 by the World’s 50 Best, so she knows a thing or two about Chilean cuisine. The pair will also be bringing in a rotating series of guest chefs from the Southern Andes to collaborate with them in the kitchen.
The food here is intended to showcase dishes from the coast to the mountains. It's too early to say what will be on the menu, but dishes from the Carousel residency included a lamb corn cake alongside grilled sea bass with quinoa, avocado, pebre and chilli. We'll have full details of the restaurant's menu closer to the opening date.
The wine list will be put together by sommelier Rosario Onetto and will have a distinct Chilean focus. It will reflect the diversity of the wine regions in the country, from the North in Atacama down to the South.
As for the space itself, that's being designed by Santiago-based architect, Macarena Aguilar and they're also commissioning three pieces on Chile's landscape from local artists.
About the opening, founder Prenay Agarwal says: "After meeting my partner, who is Chilean, I spent over a year in the country and completely immersed myself in its food scene. I was taken aback by the abundant flavours and dishes of the underexplored cuisine. That’s why I’ve opened Mareida - I want to share my love of the country and show London everything that it has to offer."
