Angelo Sato's Humble Chicken closes for a big refurb, in search of that third Michelin star

When most chefs earn their second Michelin star, they can then allow themselves to bask in the glory (and the extra bookings) for at least a few months. But not Angelo Sato and Humble Chicken. 

The restaurant started out as a primarily yakitori affair back in 2021. Then, it pivoted to more of an omakase/tasting menu approach in 2023, unofficially termed Humble Chicken 2.0. This proved to be an extremely good decision, with the restaurant earning its first star in 2024 and then a second in 2025. But Sato is not done yet as less than a month after getting that second star, he's closing the restaurant for a month's refurbishment, billed as being an immediate push for the third star as "Humble Chicken 3.0".

As Sato says in an Instagram post"...the work isn’t finished. My dream has always been three stars, and that’s exactly what we’re coming for." We'll check back in April to see just what the refurb brings, with changes likely being fewer seats in the restaurant and that £185 tasting menu might get a bit of a hike in price too...
