HIDE chef Yiannis Mexis to bring live-fire Greek restaurant PYRA to Borough market

You wait ages for a restaurant called Pyra and then suddenly two turn up at the same time. Or at least that's what it seemed at first. Recently, we reported on live fire restaurant PYRÃ opening in Queen's Park and it looked (according to an early press release from Carousel) that another restaurant with the same name was coming to London Bridge. Now we can confirm that the name for this will instead be PYRO. 

This PYRO comes from chef Yiannis Mexis, previously at Elystan Street, The Ledbury and Petrus and most recently head chef at HIDE. It sounds not entirely dissimilar to another very popular Borough Market restaurant in that it's billed as "a celebration of open-fire cooking and Greek soul" in a preview of the restaurant that he's running with Carousel. Sourcing from a combination of British producers and Greek farmers, the pop-up menu gives us an idea of what to expect from the real thing with dishes including:

  • Spanakopita, fragrant herbs, barrel-aged feta
  • Embered souvlaki skewer, prunes, radicchio, sour apple
  • Charred octopus, spiced red wine, yellow split pea
  • Portokalopita, citrus leaf ice cream, orange liquor

Given that OMA and AGORA have been just huge hits, we can see how there's plenty of room for PYRO too (but we're yet to learn just exactly where it's opening, more on that when we get it). In the meantime, if you want a preview, head on over to Carousel to book a ticket.
