They've run pop-ups and a very popular stall at Spitalfields Market but now the Crunch team are getting ready to bring their brioche sandwiches to Soho.
The folk behind it are Sacha Yonan, Michael Medovnikov and Joni Francisco - who has experience at Gauthier Soho, Chiltern Firehouse and the Experimental Group. They bake their own "brioche-inspired" bread fresh each morning (cutting back on some of the traditional brioche sweetness), to create a series of very impressive-sounding sandwiches. On the roster for Soho, there will be:
- Patty Melt - Truffle beef patties, Red Leicester cheese, crispy onion marmalade and black truffle mayonnaise
- Michael’s Chicken - Southern-fried chicken cutlet, shredded lettuce, baby pickles, homemade dill aioli
- Katsu Sando - Deep-fried Tonkatsu pork, Japanese apple and raspberry jam, shredded hispi cabbage, nori & shichimi togarashi mayonnaise
- Umami Shroomwich - Fried oyster mushrooms, miso marinated vegetables, nori and shichimi togarashi mayonnaise
- Donald’s Duck Sandwich - Slow-cooked Gressingham duck leg, banana shallots, crispy onions and smoked apple sauce
On top of that, the Soho shop will also have a new version of their steak sandwich. There will be deep-fried sides like thousand-layer potatoes, pepperoni lasagna bites and pesto lasagna bites. With an eye to avoiding food wastage they'll be making use of the edges of the brioche loaves that are not used in sandwiches for the deep-fried goodness in their French toast (soaked in custard, covered with apple and mini chocolate chunks with a side of Dulce de Leche).
Taking over what was Maitre Choux on Dean Street, there will be space for eating in as well as takeaway, with cocktails and beer on offer too.
Could this be the next big lunchtime craze to hit Soho? We'll have to wait and see.
