Last year, Tom Brown closed his Michelin-starred Cornerstone restaurant in Hackney. At the time, it was said that he was concentrating on Pearly Queen in Shoreditch as efforts to move Cornerstone to central London had fallen to the wayside. But Brown found another way to go central, and it's something of a homecoming.
The chef originally made his name working at Nathan Outlaw's restaurant in The Capital and now Brown himself will be taking on the main restaurant at the Knightsbridge hotel. That's currently the somewhat generic "Restaurants at The Capital" so this will be a big upgrade for them. Other than this early announcement, this is all we know about the restaurant right now - but we can assume that it will heavily focus on seafood just like his other restaurants.
As with his previous restaurants, there will be a strong focus on seafood, with a keen eye on sustainability. It'll also be a tasting menu only affair, with a £125 12-course option including dishes like:
- Wild bass with buttermilk and vanilla, Tuna with soy and quail egg
- Cuttlefish “ravioli” (a riff on the cuttlefish lasagna from Pearly Queen)
- Monkfish with roast chicken and wild garlic
- Turbot with smoked eel and black truffle.
- Chocolate with caviar, olive oil, and capers
There will be shorter 8/10 course meals at lunch, with those menus starting at £80. The restaurant is an intimate affair, seating only 25 people, and there will also be a revamp to the hotel's bar launching at the same time. So if you've been missing Cornerstone, this should be on your radar.
