The team behind bars like Discount Suit Company and The Sun Tavern are getting ready for their next bar, this time in Dalston. They're taking over the basement venue that was once Nest nightclub. They've brought in Tom Gibson, the man behind Ruby's and more to create some sort of bar superteam.
On the cocktail side, expect riffs on classic cocktails like:
- June Bug - Takamaka Overproof Rum, Yellow Chartreuse, Pineapple, Banana, Melon, Coconut, and Lime
- El Diablo Guapo - Quiquiriqui Mezcal with Palo Santo, Tonka Bean, Blackberry, and Umbrella London Ginger Beer
- Rude Cosmo - Ocho Blanco Tequila, Savoia Orancio, Lingonberry, Lemon Verbena, and Lime
- A French Martini with Remy Martin VSOP Cognac, Monbazillac, Raspberry Eau De Vie, and Pineapple
- The Umbrella Vesper - Grey Goose Vodka, Boatyard Gin, Kina L’Aero, and Vichy Catalan in a Mini Martini glass
As for the food, expect bar snacks by Provisions Wine & Cheese who will also be behind the wine list. That will have a focus on small, independent wineries from Italy and France. Oh, and we can expect "DJs playing esoteric selections based around heady 1980s NYC style mutant disco". So there's that.
