Holborn's the spot for a new yakitori 'beak to tail' restaurant Hotori

Lawyers and other city folk working in and around Holborn are about to have an interesting new place landing on their doorstep. Hotori is a slick-looking yakitori restaurant on New Fetter Lane that's going to be all about the 'beak to tail' experience. Owners Mike Zheng and Kuangyi Wei have loved their trips to yakitori spots in Japan, but couldn't understand why there weren't more options here in London, particularly given how good our chicken can be.

They're going to be taking that amazing chicken - sourced free range from Fosse Meadows - to serve it up in 17 different types of yakitori - engawa (belly); soriresu (chicken oyster); bonjiri (tail meat); kashiwa (thigh); tebamoto (wing); tsukune (chicken meatball); nankotsu (cartilage); sunagimo (gizzard); and hatsu (heart).

It's not all about the chicken though, there's also going to be Japanese wagyu and miso black cod, veggie sticks like Japanese yam, peppers, and shiitake mushroom along with tempura and chicken karaage.

If you've time to linger over lunch or dinner, then a seat up at the kitchen counter is the place to be, with a view over chefs using the hibachi grill. On the other hand, those pressed for time can grab a bento box to go.

As you might have guessed sake and whisky will play a prominent role on the drinks list but the wine list also sounds more interesting than most, pairing a pet nat rose with the chicken belly or a skin contact white with a chicken oyster.
