Bruton Place continues to grow as a notable, tucked-away food and drink haven in Mayfair. Down the street off Berkeley Square, you'll already find The Guinea, The Cocochine (and its sister deli The Rex) and Bellamy's among others. Now a new restaurant is joining them, called Silva.
Launched by Daria Grebenyuk, she's brought in some interesting talent to head up the restaurant. Head Chef, Slawomir Sawicki was previously at Eric Chavot, Galvin at La Chapelle and Arts Club. She's also brought in Peter Prescott, best known for partnering with Sir Terence Conran on Boundary, Lutyens and Albion, to advise on the new restaurant.
As for the food, it'll be led by seasonal produce, but taking its influence from across the world. Silva will be an all-day restaurant, kicking off with a particularly interesting breakfast offering that includes gratinated crab and Gruyère omelette as well as soufflé pancakes with white chocolate and lavender Chantilly. As for the rest of the menu, that features dishes like:
- Potato waffle topped with beef tartare and shaved winter truffle
- Baked Isle of Mull scallops with yuzu butter
- Roast duck with coco beans, fennel and orange
- Line-caught turbot cooked on a robata grill, with wakame beurre blanc
And finally dessert includes a Basque cheesecake alongside rum-roasted pineapple with coconut.
As for the wine, it'll focus on new and young winemakers with a list chosen by wine consultant, Yulia Gurevich (who is also the head sommelier for the Pachamama group). And, taking into account the area it's in, Silva will also have a "brokers list" which heads into fine wine territory.
As for the restaurant itself, it's taken over the space that was once Les Platanes so it will be on two floors and will have an outside terrace too.
