A Hot Dinners exclusive
It's been almost three years since the Mark Hix restaurant, Pharmacy 2, closed its doors at Damien Hirst's Newport Street Gallery in Vauxhall. But now we bring you news of new life in the old restaurant space. It's about to reopen as Pario, a concept popup run by chefs Charlie Bryant and George Browne.
"George and I have decided to bring a huge British produce focus into Pario," Charlie told Hot Dinners. "We have huge passion for the beautiful produce we have here in the UK, showcasing the finest of ingredients such as Wild turbot, hand dived scallops and ex-dairy Angus ribeye. It's super tasty food which isn't messed with, just straight up amazing produce, cooked simply but perfectly, with a sauce or a small garnish."
A draft menu seen by Hot Dinners includes treats like:
- Wild mushroom croustade with beetroot and ricotta
- Barbecued Cornish native lobster tail with tempura claws, crispy hash browns, shell reduction and a fennel seed mayo
- House crispy potatoes with confit garlic, garlic oil, beef dripping & crispy garlic
- Milk ice cream affogato
If you're wondering about the chefs' backgrounds, Charlie is ex-Grill at The Dorchester and Alyn Williams at the Westbury, while George is a private chef who's done a lot of pop-ups around town and who coincidentally is the son of chef Simon Browne who previously opened a restaurant in Ilfracombe with Hirst more than 20 years ago.
The opening at the gallery space is perfectly timed for London Frieze week, "as we think it's a great way of bringing in our location," adds Charlie.
