A Mexican salsa business, founded on a grandmother's amazing recipes, is gearing up for its first big London opening. Conchita's Mexican Kitchen has been popping up in food halls and residencies around London and Brighton for the past year or so. But now it's entering the big league with a restaurant in Selfridges Food Hall.
The man behind it is New Yorker Javier Vera-Abbassi whose grandmother Conchita inspired the business. His is the first Mexican concession to open at the department store. You'll find it just inside the Orchard Street entrance to the food hall (where Canna Coffee used to be).
For breakfast (which will launch imminently, although not at the start) they'll be serving up breakfast burritos, stuffed with scrambled eggs, roasted potatoes, Pico de Gallo, shredded cheese, guacamole, tomato, and Conchita’s chipotle alongside Conchas, a Mexican brioche-like sweet bread; and fresh fruit dusted with tajin.
At lunchtime, things move up a notch with a line of tacos, burritos and salads including:
- Cochinita Pibil tacos – slow-roasted pork shoulder cooked in achiote and spices, served with habanero and pineapple escabeche
- Beef Birria burritos – beef brisket cooked in guajillo peppers and Conchita’s chipotle sauce with guacamole, rice, black beans, sour cream and cheese, served with Birria consommé for dipping
- Nopale salad - cactus leaves, tomatoes, onion, goat's cheese and coriander lime dressing
You'll probably be interested to know that there will be churros with dulce de leche and tres leches cake for dessert, and they'll also be offering frozen margaritas and agua frescas on the drinks front.
