Pidgin has now closed its doors for good, but something new is rapidly taking its place.
Sesta sees the former Pidgin head chef Drew Snaith teaming up with former Pidgin GM Hannah Kowalski to launch their own restaurant. They'll be bringing the rest of the Pidgin team (minus founders Ramsden and Herlihy, of course) with them to the new venture. While that means there will be some familiarity in the new restaurant, it will still be a very different beast (see the photo above for the new look).
For one, the weekly changing menus are done (although they will change seasonally), with Snaith's cooking focused on "modern, creative takes on British and European classics" with a little Southeast Asia and live-fire cooking influence thrown in. There will be snacks like devilled egg with wind sausage emulsion, trout roe and chive or Doddington cheese scone topped with Braybrooke rarebit while the main menu includes:
- Smoked eel and lovage quiche, parmesan soubise
- King oyster pate de campa, cornichons, miso and pumpkin seed cracker
- Cornish brill, hard herb pil-pil, aggressive aioli
- Mutton bacon ribs with fermented garlic and Thai chilli honey and coriander mustard
- Chilled rice pudding brulee, blackberry ripple with lime leaf ice cream
Wines will be European and natural, with a decent selection available by the glass while cocktails include a Mezcal Negroni with Belsazar rose vermouth, Campari and lime.
It's a shame to see Pidgin close, but it's also great to see something interesting pop up in its place so soon.
