The major revamp of Kitchen Table in 2020 also saw the end of its sibling restaurant Sandia Chang's Bubbledogs. The two-Michelin-starred Kitchen Table dramatically expanded, taking over the space that formerly Chang's hot dogs and Champagne spot. Bubbledogs popped back up briefly from time to time, but now it's making an extended return, hitting up the 45 Park Lane terrace for a summer-long take over.
For the residency, Sandia Chang and James Knappett are teaming up with Cut's executive chef Elliott Grover. The chefs are collaborating on the menu, with the hot dogs made using ingredients from The Franconian Sausage Company, and the rolls made in-house at Cut. That menu will include:
- Native Dog - crispy native lobster tempura, Marie rose sauce, beluga caviar
- The Kagoshima - A5 Wagyu striploin, Japanese mayo, shaved summer truffle
- Fourth of July - spicy BBQ sauce, coleslaw & crispy bacon
Alongside, they'll have tater tots spiced with Japanese togarashi as well as Cut’s mac & cheese Bubbledogs' buffalo chicken wings. There will even be a hot dog option for dessert, with one made with Jivara chocolate ganache served on a cinnamon brioche with a cherry & passion fruit sauce.
There will, of course, be Champagne to pair with your hot dogs, with grower Champagnes specifically selected by Sandia Chang.
So if you've been missing Bubbledogs over the past few years, this summer you'll need to head to Park Lane.
